This beautiful, 85-room country house has recently completed a multi- million dollar makeover of all rooms, the lounge and meeting rooms, including a new bar, and an expanded, luxurious spa, including a beautiful heated outdoor swimming pool. Just a short stroll from Katoomba's famous Three Sisters landmark, Lilianfels offers unrivalled vistas of the World Heritage-listed Blue Mountains.

In the 1890s, Lilianfels was the gracious country residence of a former NSW Chief Justice. Lovingly restored, the historic home now houses the elegant Darley's restaurant. Set amid two acres of English gardens shaded by majestic pines and cedars, Lilianfels lets you be as idle or energetic as you like. There are reading and billiards rooms, tennis courts and mountain bikes. The spa has the most sophisticated facilities outside Sydney, with four treatment rooms, indoor and outdoor heated pools, gym, saunas and steam rooms.

Lianfels Blue Mountains Resort and Spa offers a choice of fine dining in the award winning Darley’s Restaurant, casual Mediterranean cuisine in Tre Sorelle and all day dining and afternoon teas in the Lounge, plus 24-hour room service.

Darley's is located in the original historic 'Lilianfels House'. An external covered verandah affords a delightful location for outdoor summer dining, contrasting with the warmth of log fires during winter. Both Tre Sorelle and the Lounge are located in the main building
Chef's Profile

Hugh Whitehouse is Executive Chef extraordinaire for Lilianfels' acclaimed Darley’s Restaurant. He has joined Lilianfels from Milsons Restaurant, Kirribilli. Famous for his finely crafted cuisine, Whitehouse has the extraordinary reputation of acheiving the Sydney Morning Herald's coveted 'Chefs Hat’ for five consecutive years. His passionate and professional approach to taste, texture and flavour, is evident in every dish. His menu highlights include roast breast of pheasant with pheasant and sage crepinette, roasted chestnuts, salsify and chestnuts mushrooms.

History
Darley's was once the summer residence to Governor Darley and this heritage listed property has retained its authentic glory. The nineteenth century grand old rooms in with polished wooden floors, firplaces and an all season enclosed deck create the perfect ambiance for a heavenly enticement of the senses.

Enjoy Hugh's exquisite Applewood smoked salmon with mud crab, sushi rice, lemonade Fruit and wasabi with a cool glass of Barossa Semillon or try the tantalizing pressed duck confit with black pudding, seared sea scallops, and prunes accompanied by a Hunter Valley Riesling. The barramundi cooked in coconut milk with aromatic Indian spices and rice pilaf together with a Hunter Valley Chardonnay or Shiraz is an excellent choice as a second course.

The flavoursome roasted pheasant with chestnut & porcini mushrooms, parsnip puree and chestnuts with a Yarra Valley Merlot is an equally good choice and fitting the entourage of the restaurant. The lemon verbena scented panna cotta with poached quinces set in jelly makes for an outstanding dessert although it is hard not to give into the rich selection of Australian and European cheeses served with a lovely glass of European port.

Hugh Whitehouse’s passionate and professional approach to taste, texture and flavour, is evident in every single delightful plate enhanced by prompt, professional service promises a night to remember.
